The Fizz
The Blanc de Blancs from DAOSA captures the essence of site-expression, grower-producer sparkling wine that gets us and fizz fanatics excited.
Sourced entirely from the Bizot Vineyard at 550 metres altitude in the Piccadilly Valley, one of the highest in the area. To ensure adequate ripening, vines are planted on a north north-east facing slope to capture maximal sunlight.
The handpicked fruit was whole bunch pressed, cold settled in tank, then fermented in 600L oak barrels. There, the wine was retained for eight months on lees, with light bâttonage to impart richness, and malolactic fermentation to soften the acidity and bring about a creamier mouthfeel in the resultant sparkling.
Once bottled and tiraged, the wine sees 42 months on lees before disgorgement - a total of 4 years in lees contact. Vibrant citrus and quince follows bready aromas, captured within a glass of persistently fine bubbles and a long, decadent finish. One for now, but a wine of this calibre will last another decade, taking on delicious honey, nougat and marmalade flavours, if cellared under the right conditions.
