Australia's (unofficial) Queen of Roussanne, Sarah Gough, brings us everything that we look for in a premium sparkling.

100% estate-grown, handpicked roussanne fruit from 26-year old vines, picked deep within the canopy where the fruit is sheltered from the sun, retaining high acidity in the crisp juice. 

True to mèthode traditionnelle, the wine was put on tirage shortly after fermentation and only disgorged in mid-2022 - a whopping 6 years on lees.

Years of quiet maturation culminates in a fresh sparkling with honeysuckle, yellow apple, ripe green pear swathing in layers of freshly baked buttery pastry and brioche, leading to a long, savoury finish. Pairs brilliantly with mild soft cheeses, through to tempura vegetables, white-flesh fish with beurre blanc, or woodfire-roasted chicken. 

It's almost illegal for us to be selling such a complex sparkling wine at this price point. We're pretty confident we've uncovered Australia's hidden sparkling gem...
