From the makers who epitomise Tasmanian sparkling wine.
A traditional method blend of 70% chardonnay and 30% pinot noir sourced from mature, hand-tended vines established in 1980’s - 1990s from the Coal River Valley, Derwent Valley, Tasman Peninsula, and North-west Tasmania.
All fruit is carefully handpicked before being pressed and part-fermented in seasoned French oak up to 18 months with medium bâttonage to impart greater richness and texture into the wine.
The final product sees a total of seven years lees, showing incredible complexity on the nose, with brioche, lemon zest, and tarte tatin. This follows with a rich mouthfeel yet lipsmacking acidity, accompanied by notes of peach, lemon and nuttiness owing to its cork age following disgorgement. Best enjoyed in the luxurious setting it was designed for - caviar, roasted lobster or wagyu M9+ steak.
