From the makers who epitomise Tasmanian sparkling wine.
A traditional method 100% chardonnay from a single site in the West Tamar of northern Tasmania (big prestige champagne energy).
Fruit is all hand-harvested, followed by whole bunch pressing. The cour de cuvée was separated from the pressing fraction. Primary fermentations were conducted in oak barriques and puncheons for 6 months, including wild fermentation. Malolactic fermentation was blocked by use of low temperature tirage and storage, retaining the crisp acidity of the exemplary chardonnay.
This is the first disgorgement of this vintage which sees six years on lees. A pale lemon hue in the glass with notes of honey, green apple and pastry wafting through. On the palate is the crisp acidity leaving you salivating, with notes of lemon zest, apple strudel and toast. With only 477 bottles in this lot these wines are rarer than hens teeth. To be enjoyed now (we suggest decanting) with seafood, or cellared for years to come before enjoying glamorously.
