From the makers who epitomise Tasmanian sparkling wine.
A traditional method 100% chardonnay from a single site in the West Tamar of northern Tasmania (big prestige champagne energy).
Fruit is all hand-harvested, followed by whole bunch pressing. The cour de cuvée was separated from the pressing fraction. Primary fermentations were conducted in oak barriques and puncheons for 6 months, including wild fermentation. Malolactic fermentation was blocked by use of low temperature tirage and storage, retaining the crisp acidity of the exemplary chardonnay.
This is the second disgorgement of this vintage which sees almost eight years on lees. A green-gold hue shines through, accompanied with notes of lemon pie and brioche bun. The extra time on lees has blessed the wine with richness, austere acidity and complex flavours of toast, green apply and citrus that seemingly last forever on the palate. Only 900 bottles in existence, if they haven't already been consumed in great company.
