Minimal intervention, ancient techniques, reductive approach - these are principles underpinning Martin Moran of Mordrelle's blanc de blanc.
100% handpicked chardonnay fruit sourced from growers in Mylor, Hahndorf and Balhannah in the Adelaide Hills. Grapes are pressed, juice fermented in stainless steel to avoid any oxygenation to the wine, and naturally avoid malolactic fermentation, maintaining crisp acidity and freshness.
The wine is then bottled and tiraged, hand-riddled over 6 years in the cool cellar warehouse. Disgorgement is à la volée - a highly technical approach to eject the lees by hand without the assistance of freezing that only few can achieve with precision.
The 2016 blanc de blanc shows persistent length, refreshing acidity, gentle notes of brioche on the nose, with hazelnut and lemon characteristics. The artwork re-imaged for the wine label captures the beauty and essence of this metodo tradicional triumph, which offers incredible value for quality. A pure expression of Adelaide Hills terroir and extended lees age chardonnay.
