The Fizz
From estate-grown, handpicked fruit in the beautiful cool-climate region of the Southern Fleurieu.
This non-vintage wine has base vintage 2018 fruit consisting of chardonnay, pinot blanc and savagnin (mindblowing) to produce a sparkling reminiscent of crémant de Jura. The pressed fruit was cold settled and underwent malolactic fermentation, with the pinot blanc proportion spending 12 months in seasoned French oak barriques. After bottling and disgorgement in 2019, this has seen a whopping 3 years under cork before hitting the shelves - something many winemakers can only dream of having.
The wine gives an incredible luxe golden visual with a very light mousse in the glass. Notes of brioche, hazelnut and honey fill the aromas owing to its time spent both under lees contact for 18 months and cork age. Complex tertiary flavours of honey and nuts, interplay with lemon and citrus, held together with bright acidity from the savagnin and body from the pinot blanc.
This is quite possibly the best-value sparkling wine in Australia and is ready for drinking without need for further cellaring. We like it by itself, or with soft cheeses at the end of a night.
