The ultimate sparkling aperitif - prosecco.
Originally a northern Italian varietal, Nagambie Lakes cool climate, belts of granite sand over ancient river gravel offer a prime growing area to impart delicate minerality and high acidity to the prosecco.
The fruit harvested over a couple of nights starting on 19th February 2021, to ensure natural crisp acidity in the first pick, and increased ripeness and fragrance in another a few days later.
The base wine was fermented conventionally in stainless steel and left on light lees for a couple of months to build complexity and texture. Secondary ferment was completed in Charmat pressure tanks, true to the method of prosecco.
The resultant wine shows pronounced aromas of rockmelon, nashi pear and granny smith apple. A light, vibrant body is enveloped with honeysuckle, melon and fresh green pair, held by a high-acid backbone and leading to a long, memorable finish.
