DAOSA Natural Réserve 5th Release
The Fizz
The 5th release of the multi-vintage cuvée from DAOSA.
Similar to the Bollinger house style, the cuvée is dominated by pinot noir, comprising 89% of the blend, with the remainder chardonnay. Fruit is sourced from high-altitude Piccadilly Valley vines within the Adelaide Hills, creating a perfect slow ripening environment for sparkling wines.
Primary and malolactic fermentation occurred within stainless steel, preserving freshness and purity of fruit. Whilst the predominant proportion of the 5th release is 2020 harvest, 20% of reserve wines from 2018 and 2019 were added to build character into the blend.
After 18 months on lees, the resultant wine gives flavours of flint, nougat and strawberry, with racy acidity and delicate finish. Superb drinking on a Spring's day, made even better with poultry or seafood dishes!
