Martin Moran of Mordrelle brings us the pièce de résistance of late-disgorged Adelaide Hills blanc de blanc. A real prestige sparkling release.
100% handpicked chardonnay fruit sourced from growers in Mylor, Hahndorf and Balhannah in the Adelaide Hills. Grapes are pressed, juice fermented in stainless steel to avoid any oxygenation to the wine, and naturally avoid malolactic fermentation, maintaining crisp acidity and freshness.
The wine is then bottled and tiraged, hand-riddled over 11 years in the cool cellar warehouse. Disgorgement on demand is à la volée - a highly technical approach to eject the lees by hand without the assistance of freezing that only few can achieve with precision.
The 2011 blanc de blanc steps it up a notch. Pale straw hue with a fine mousse beading in the glass - you couldn't possibly think this is an 11-year old wine on appearance. Extended lees contact offer the wine toast, brioche, pastry on the nose, with green apple, lemon pith and hazelnut on the palate. The freshness and mouthwatering acidity will keep you going back for more. Only 10 dozen or so remain in existence, so it's here for a good time not a long time...
